Giant red amaranth is a tall, tropical plant with vibrant red-purple leaves and seeds that can be eaten like a grain. Native to the wetlands of the southeastern United States. It is easy to grow in hot weather, with plants reaching up to 6 feet or more, and its leaves are nutritious, can be cooked like spinach, and are rich in vitamins and minerals.
