Tat Soi Mustard specifically the *Black Knight* variety, is a cold-tolerant leafy green from the Brassica family, closely related to mustard greens. Known for its dark, glossy leaves and mild mustard flavor, it grows in a rosette form, making it an attractive addition to salads, stir-fries, and soups.
For planting, Tat Soi thrives in cool weather, making it ideal for spring or fall. You can sow seeds directly into the garden 2–4 weeks before the last frost in spring, or 6–8 weeks before the first frost in fall. It prefers well-draining, fertile soil with a slightly acidic to neutral pH (around 6.0–7.0), so it’s a good idea to amend the soil with compost to promote healthy growth.
Tat Soi grows best in full sun or partial shade. In warmer climates, partial shade helps protect it from the heat. When planting, sow the seeds about ¼ inch deep and space them 12 inches apart to allow enough room for the plants to form their rosettes. As the plants grow, thin them out to avoid overcrowding.
Consistent moisture is essential, but be careful not to overwater, as soggy soil can lead to root rot. Tat Soi does best in temperatures between 50°F and 70°F (10°C to 21°C), and it can even tolerate light frosts, making it a great choice for cool-season gardening.
You can start harvesting the outer leaves when they are 4–6 inches tall, usually about 30–40 days after planting. By harvesting this way, the plant will continue to produce new leaves from the center. For a continuous supply, consider planting seeds every couple of weeks. Keep an eye out for common pests like aphids or flea beetles, which may affect young plants.
